Meatballs with Vegetables in Tomato Cream Sauce

Ingredients
• 2 tablespoons salted butter
• 2-3 slices of a large onion, diced
• 1 portobello mushroom, sliced or diced how you like it
• 3 carrots, sliced
• 3 potatoes, sliced
• a handful of green beans, cut into 1-inch pieces
• 1/2 cup water
Sauce
• 1/3 cup cream
• 1/8 cup brown rice flour
• approximately 2 tablespoons tomato paste
• a couple tablespoons of water (more water will make the sauce thinner)
Directions
Place a large pan over low heat and put the butter in. Dice the onion and add it
to the pan. Add other vegetables in the order given. Each vegetable should
be chopped after the previous one has been added to the pan; some vegetables
need more time to cook and this method gives them the needed time while not
allowing others to overcook. Add 1/2 cup water to the pan. Cover and allow to
cook while you make meatballs. Place
meatballs on top of vegetables. Cover and cook until meatballs are done, about
• minutes.
Place ingredients for sauce in a bowl. Use a wire whisk to mix thoroughly; there
should be no clumps of flour. Pour sauce into the pan. Stir until the sauce
thickens. The meal is done when the sauce begins to bubble.
