Beef or Chicken Broth

Prep time: 5-10 minutes Cook time: all day


Ingredients

• beef or chicken bones
• water
• 1/4 cup red wine vinegar


Directions

Place ingredients in a 6-8 quart pot. Simmer 24 hours. Strain, place in jars, and put jars in the refrigerator or freezer until ready to use.

Notes:

• If you cook meat that has bones in it, you can use the bones for soup when you are done eating---it doesn't really matter if they have already been cooked.
• If you choose to freeze the broth, the jars you use should be straight-sided. (Otherwise the expansion of the liquid could break them.)
If you store the broth in the refrigerator, it should be used within five days.
