Buckwheat Banana Cookies

Ingredients
Part A
• 1 small banana
• 1/2 cup heavy cream
• 1 tablespoon vinegar
• a dash of vanilla extract
Part B
• 1/2 cup buckwheat flour
• 3 scoops stevia
• 1/4 teaspoon baking soda
Directions
Place ingredients for part A (all the wet ingredients) in a blender and blend
well. Place the dry ingredients (part B) in a bowl and mix. Pour the blended
mixture into the bowl, and mix just until well combined. Place spoonfuls of
the mixture on a buttered baking sheet/pizza stone/plate/whatever you like to use.
Bake at 400º until slightly browned, about 10 minutes.

Notes:
This recipe may also be used for banana bread: Place batter in a mini loaf pan
and bake at 300º for about 40 minutes---bread should spring back when gently
pressed and should be slightly browned. Loaf pan should be lined with a strip
of parchment paper, as the bread tends to stick to the pan.
